2018 New Habits! Produce List and Recipes 01/06 – 01/20/2018

January 6, 2018
2018 has sprouted and we are so proud of our members who are consistently eating healthy and creating delicious meals for their families! We believe that the beginning of the year is a great time to just begin! Begin by taking a step into the right direction! You don’t have to turn your whole life upside down, because lets be honest, when you let go for that millisecond we feel like failure and some even give up! Start small by adding a small new habit into your life, do not make it a requirement. For example: “When I wake up, I will not look at my emails for the first 30 minutes of the day!” (Notice, I didn’t say one hour because let’s be real we have too see all of the new Instagram’s posts and stories)
 -
Another few examples:
  • Pick a day of the week that you will cook, either something new or a few meals for the busy week!
  • Call someone you haven’t spoken to while stuck on 95!
  • Read that book on your kindle list before you go to bed for 20 minutes instead of the Netflix show that keeps you awake until 1am!
  • Get an app that summarizes the news…(in a non political way, if that is possible, so you know what is going on)
  • Always have fruits at the house (OK this one is totally biased since we can provide that to you)
  • Put your phone in another room or in silent when having dinner with your loved ones (Unless you are on-call)
  • Give one compliment a day
  • Add one vegetable side to every meal you eat! (Also 100% biased, but still an amazing idea)
  • Blast music, minimum once a week, and dance like no one is watching belting out to your favorite song… (Mine is Believe by Cher, and I definitely count it as a work out)
  • Ok we live in Florida, get a friend and go for a walk outside so you can both catch up and exercise together… I always like to go places where I can window shop and walk with my friend!
  • Try to give as many hugs as possible, you never know how a gesture like that could mean to someone!
  • Busy, oh I know! Schedule 3 hours for yourself a week! You do what you want!
We hope we have made you excited with this ideas for a happier 2018! Try one or two, but do not put pressure on yourself! They will become habits and you can enjoy the present!

Recipe of the Week

Broccoli Cheese Stuffed Spaghetti
Ingredients
  • 1 spaghetti squash cut in half, seeds removed
  • non stick spray
  • 2 cups chopped broccoli florets
  • 3 cloves garlic minced
  • 1 tsp red pepper flakes
  • pinch of salt and pepper
  • 1 tsp Italian season or use a mix of oregano, basil, thyme
  • 1/2 cup part skim shredded mozzarella cheese I like to shred my own
  • 1/3 cup Parmesan cheese shredded

Instructions

  1. In a microwave save dish, place your squash halves side by side. Add about 1/4 cup water to the bottom of the dish (water should be covering the bottom, but not more than 1/4 inch high). Place into microwave and cook on high for 9-11 minutes, or until squash is tender** Remove, and set aside for about 10 minutes to cool.
  2. In a skillet coated with nonstick spray, add red pepper flakes and cook for 30 seconds, stirring constantly. Add broccoli and garlic, stirring to combine. Add about 2 TBS water to the skillet, and turn up the heat. Saute for 3-5 more minutes, or until the chopped broccoli is tender. Add mixture to a large bowl, discarding any left over water.
  3. Using a fork, scrape out the flesh/’spaghetti’ of the squash, and add it to the large bowl with the broccoli mixture. Add Parmesan cheese, salt and pepper, and Italian seasoning to the mixture, stir to combine.
  4. Turn your broiler on medium/high. Distribute the mixture back into the squash shells, then sprinkle 1/4 cup of mozzarella cheese on top of each squash half. Place shells into an oven safe baking dish/pan.
  5. Place under broiler, watching carefully. Remove when cheese is bubbling and browned, about 2-3 minutes depending on how close the squash is to the broiler.
  6. Remove and enjoy!
