Now that everyone is back in the groove of the school year, it is time to renew our commitment to our health and wellness. Now, you can take your time to adventure by trying different dishes, cooking potatoes a completely different way, hopefully you were able to really find a savory way to cook the bok choy from the previous box! We actually even found a recipe for muffins made of beets! But whatever you do…DO NOT…I repeat DO NOT throw the top of the beets out! They are extremely nutritious!

It has been a while, but we brought back the red cabbage for you to make delicious cold slaw. Celery for the kids lunch box or for a quick appetizer before you make the most exquisite spaghetti squash with tomato sauce. Hopefully our box will help you get back into the groove.

Recipe of the Rotation

Stir-Fried Baby Bok Choy With Garlic
Share with us on Facebook or Instagram the delicious outcome!!
 

Ingredients:

  • 1 large (12-14 oz) sweet potato, raw
  • 3 cups red cabbage, coarsely chopped
  • 2 limes juice
  • 2 tbsp olive oil, extra virgin
  • 2 tbsp maple syrup or raw honey
  • 1/2 tsp cumin
  • 3/4 tsp himalayan pink salt
  • Red pepper flakes, to taste
  • Bunch cilantro, finely chopped
  • 1/2 cup peanuts, plain

Instructions

  1. Spiralize sweet potato and cut into shorter “noodles” using kitchen shears. A lot of people do not peal the potato that is your choice!
  2. In a medium bowl, add sweet potato, cabbage, lime juice, oil, honey and salt. Stir well to combine. Let stand for 10 minutes.
  3. Add red pepper flakes, cilantro and peanuts, stir well. Serve sweet potato noodle salad cold.
  4. Storage Instructions: Refrigerate in an airtight container for up to 2 days.
