This week’s box is filled with different items so each chef can cook to as they fancy! We have asparagus which you can grill or sauté, add a little bit of salt and make sure you do not eat it all before serving it at the table! Spaghetti Squash is an Endlessly Organic’s team favorite, we love eating right from the squash itself, it makes everyone look like a Top Chef! Fruit lovers will enjoy the most succulent cantaloupe that are just in season!

Recipe of the Week

Thai Peanut Spaghetti Squash


  • 1 large spaghetti squash, halved, seeds removed
  • 2 tablespoons olive oil
  • 1 head broccoli, cut into florets
  • Peanut Sauce:
  • 1/2 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar, optional
  • 1 tablespoon honey
  • 1-2 tablespoons sriracha or preferred hot sauce
  • 1 tablespoon lime juice
  • 1/4-1/3 cup warm water, as needed
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, peeled and minced
  • Kosher salt and freshly ground pepper, to taste
  • Green onion, garnish
  • Peanuts, garnish


  1. Preheat oven to 375º F and, if you haven’t already, cut spaghetti squash in half. Remove and discard seeds.
  2. Drizzle squash with olive oil, then season generously with salt and pepper. Place cut side down on a baking sheet and place in oven.
  3. Roast for 40-45 minutes, or until fork tender.
  4. In a large bowl, whisk together peanut butter, soy sauce, rice wine vinegar, honey, sriracha and lime juice until smooth. Then slightly with water (as desired), then whisk in garlic and ginger.
  5. Taste and adjust seasoning, if necessary.
  6. Place broccoli florets in a medium bowl and drizzle 1/2 peanut sauce over them [use as much or as little sauce as needed] and toss until they’re all evenly coated.
  7. Transfer broccoli to second baking sheet (lined with parchment paper, if desired), then place in oven and roast for 15-20 minutes. (While squash has 20 minutes remaining until cooked.)
  8. Remove veggies from oven and let cool slightly.
  9. When spaghetti squash is cool enough to handle, shred into “noodles” and toss noodles with roasted broccoli.
  10. Return to squash halves and top with more sauce, green onions and peanuts. Enjoy!
