This week’s box you will see all shades of Green! Florida Green Beans, Florida Collard Greens, Broccoli Crowns, Brussel Sprouts and many more! What you will pull out of the box is called a Kabocha Squash and let me warn you, it is delicious! If you need ideas on how to make it, please visit our pinterest page, we have added plenty of recipes. Also, for the members doing the Paleo diet, we have Eggplant!! I love making an Eggplant and pepper’s dip, but I have heard the Eggplant lasagna turns into the talk of the parties!

Recipe of the Week

Roasted Kabocha Squash with Brown Butter

Ingredients

  • 1 kabocha squash
  • 1 tablespoon canola oil
  • 3/4 cup pecan halves
  • 1/4 cup butter
  • 1/4 teaspoon sea salt
  • 4 teaspoons maple syrup
  • 1 teaspoon freshly ground
  • nutmeg

Instructions

  1. Preheat oven to 375°F. Spray a casserole with cooking spray, and set aside.
  2. In a large frying pan, heat the oil and cook the onions over lowest heat for 6-8 minutes, until quite soft and beginning to brown lightly. Add the bell pepper, mushrooms and kale, and cook for 3-4 minutes, until the kale wilts and the pepper softens. Stir in the thyme. Remove from heat and allow to cool for 5 minutes.
  3. In a large mixing bowl, whisk the eggs until they are well combined. Add the milk and cheese, and mix well. Season with black pepper. When the vegetables are coolish, mix them with the eggs, and pour everything into the prepared casserole dish.
  4. Bake uncovered at 375F for 35 minutes.
  5. Remove from the oven, and let the casserole sit for 5 minutes. Serve warm or at room temperature.
