Getting Fancy Box Produce List and Recipes 06/18 – 07/01/2017

This week’s rotation is for us to get Fancy with Portobello mushrooms either stuffed, added to a delicious sauce, or even grilled! Eggplants to create incredible dips or brochettas! Oh! we found an awesome recipe for sweet potatoes brownies… What!?!?! I know, same reaction I had! We have grapes again because they are just so delicious and refreshing! Check out some of our exciting news below!

EO member tips: Cut the eggplants and place it in a draining bowl, add 1tsp of salt and leave it there while cutting the next ingredients. This is a trick to remove the access liquid of the eggplant when cooking. After your are done cutting the rest of the veggies, rinse the eggplant with water to remove the salt and continue the cooking process.

Quick tip: Since we HATE food going to waste (It’ a No No!), an awesome tip is to freeze the veggies or fruits for later use! We have members that have told us they love making a soup and freezing it. Do this on the weekend so you don’t forget to use any items in the fridge and it is already made after a busy day at work! For the Juicers, please freeze the mint so you can use it in your smoothies throughout the two weeks!

Recipe of the Rotation

EASY ROASTED VEGETABLES WITH HONEY AND BALSAMIC SYRUP

Instructions

layer 1- Sliced eggplant

layer 2- chopped roma tomatoes, crushed garlic, basil, and olive oil tossed in a bowl

layer 3- mozz cheese, parm cheese, feta cheese (optional)

topped with “Blaze” balsamic glaze… any balsamic vinegar will do, or none at all.. it’s mainly for the pretty look.

I cooked them out on the grill on a grill pan. First I cooked each side of the eggplant until it was slightly browned on medium-high with the lid closed. (EO member tips: suggested also to do it in the oven)

Then once I flipped them, I added layers 2 and 3. Didn’t take very long and was fairly easy. The result, a low carb, vegetarian meal without heating up my kitchen! During the winter you could also broil them in the oven. I prefer pretty much anything on the grill.
