Independence Box Produce List and Recipes 06/02 – 07/15/2017

This week’s box is full of colors! We can make a delicious lettuce wrap and also grill corn while enjoying a hot day at the pool! If you are sitting outside grab the sweet grapes put them on a bowl with ice and enjoy refreshing cold grapes the whole time!

Have you missed broccoli as much as we have? Then we have phenomenal news, broccoli is back!

Cool fact: Corn is actually a member of the grass family! The City of Chicago was named after garlic! ‘Chicagaoua’ was the Indian word for wild garlic. Broccoli was once considered ‘exotic’ in home gardens

Quick tip: Do NOT wash produce once you receive it! Only wash before you are ready to cook it or consume it. By washing the produce it increases the changes of mold growing!

Quick tip: Separate the carrots from the leaves as soon as you receive your box. The leaves will pull the nutrients it needs from the root, the carrot or beet,  in order to survive therefore the root will get mushy quickly! PLEASE do not toss out the leaves of these two delicious veggies, if you juice or make smoothies they are wonderful to juice and very high in nutrients!

Recipe of the Rotation

Grilled Romaine, Corn and Chicken Salad with Salsa Dressing

Ingredients:
FOR THE DRESSING:
  • 1/2 cup jarred mild salsa
  • 4 teaspoons extra virgin olive oil
  • 1/2 lime
FOR THE CHICKEN:
  • 4 boneless, skinless chicken thighs (4 oz each), trimmed of fat
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cumin
FOR THE GRILLED SALAD:
  • 2 corn on the cobs, husks removed
  • 2 romaine hearts
  • olive oil spray
  • 4 oz avocado (1 small hass) sliced
  • 2 tablespoons diced red onion
  • 1/2 cup halved grape tomatoes
  • pinch of kosher salt
Instructions
  1. Combine the salsa, olive oil and lime juice; set aside.
  2. Season the chicken.
  3. Light the grill to medium heat. Remove any tired outer leaves from the romaine, then halve each head vertically. Place on a large platter and spray cut sides with olive oil spray. Lightly spray corn with olive oil.
  4. Place chicken and corn on the grill and cook, until cooked through, about 5 minutes on each side, until the chicken is cooked through and the corn is tender. Remove and place on a cutting board.
  5. Grill romaine close to the heat source over high, cut side down about 1 to 2 minutes. Remove.
  6. Slice the chicken into strips, cut the kernels off the corn and serve over Romaine with avocado, tomatoes, onions, salt and dressing on top.
